COLUMNS: A perfect meal for Stampede and Canada Day long weekend

There’s Canada Day Celebrations next weekend and Cariboo communities have special events planned.

There’s Canada Day Celebrations next weekend and Cariboo communities have special events planned.

The biggest celebration next weekend is of course the Williams Lake Stampede.

The Stampede Street Party happens on Saturday along with the Parade.

Canada’s Birthday in Historic Barkerville has many activities for the whole family and a dance in the evening. In 1870 the miners gathered in Barkerville to celebrate Canada’s birthday even though our province was not part of the dominion.

It was 1879 when the July 1st holiday was established by statute under the name Dominion Day.

We are so very fortunate to live in this great country of Canada and I hope you find some time to take in some of the many events being staged to celebrate our birthday.

There are many people who come into the Cariboo this weekend for a holiday, a visit with friends and relatives or must to take in the fun.

There’s also people who use the weekend to make their own fun happen in the great outdoors. From golfing to fishing there’s certainly lots to do in the Cariboo.

People don’t want to spend a lot of time on the long weekend cooking…whether it’s at home on the barbecue or over a campfire. Thirty minutes is not to long to slave over the barbecue for a long weekend tasty treat.

Lemon Herb Barbecue sauce for Chicken

• 1/4 cup olive oil

• 2 tbsp lemon juice

• 1 tsp minced onion

• 1/2 tsp salt

• 1/2 tsp dried thyme

• 1/4 tsp dried marjoram

• 2 cloves of garlic minced

• 4 skinless, boneless chicken breast halves

Put all ingredients in a blender or food processor until thick and smooth

Take a piece of aluminum foil, spray cooking oil and arrange chicken on it and brush with this quick to make sauce. You should have a 15 minute cooking time and a prep time of about the same. This gives you a quick 30 minute meal for the long Canada Day and Stampede weekend.

Have a good weekend folks.

Bye for now and Gooood Cooking.
